I’ve had quite a few requests for the recipe of my banana orange and pistachio cake so I’ve decided to post it here.
It’s my standard ‘go to’ banana cake recipe, after you add the bananas and creme fraiche add whatever takes your fancy- great with chocolate chunks, (even better when you replace 1 oz of flour with cocoa) drizzled with choc.. Mmm ! Its a really heavy solid cake mix, great for cutting into little bars and works well as a loaf too.
3oz marg, softened
*cream together till pale and fluffy,
Then beat in;
1 large egg
Add 10oz flour & 2 level tsp baking powder
2 mashed bananas mixed with 100* ml of either creme fraiche, buttermilk or natural yoghurt (if no other liquid is being added use 125ml)
*this is where you add the ‘whatever’
For the orange &pistachio I used;
Grated rind and juice of 1 orange
As many pistachio nuts as you can be bothered to shell ( I got to about a handful, but it could have done with more tbh)
Bake at 180, for around 45 mins (+10-15 if its in a loaf tin)
Today’s icing was….
Standard cream cheese icing ( butter, icing sugar cream cheese) no idea what quantities I used…. With the zest of an orange grated in. Left it in the fridge for Half an hour to really get the orangey flavour …
